‘Emirati Recipes’: A Celebration of Flavour, Memory, and Local Heritage

As part of its support for the ‘Ramadan in Dubai’ campaign under the umbrella of the ‘Season of Wulfa’, Dubai Culture & Arts Authority (Dubai Culture) has launched ‘Emirati Recipes’, a cookbook dedicated to celebrating local food culture and spotlighting Emirati talent and expertise in the culinary arts. Produced in collaboration with the International Centre for Culinary Arts (ICCA Dubai), the cookbook features 30 curated recipes inspired by Emirati cuisine, renowned for its rich ingredients and diverse traditional dishes prepared for Hag Al Leila, Suhoor and Iftar gatherings, Eid celebrations, as well as everyday meals. The collection includes a variety of meat, poultry, and seafood dishes, with each recipe representing a blend of memories and stories rooted in family kitchens and shared dining tables.

The book showcases the creativity of a distinguished group of Emirati chefs: Aisha Adil Alkhoori, Alya Al-Ali, Asayel Mohamed Almarzooqi, Auhood Alzarooni, Fatima Hassan Al Zaabi, Hamda Adil Alkhoori, Huda Omar Alghfeli, Khawla Omar Alghfeli, Maitha Omar Alghfeli, Meera Jasem Alzaabi, Mohammad AlBanna, Naima AlMulla, Noora Alawadi, Salwa Salim Aljallaf, and Shadha Sultan Alhosani. Through their contributions, they present distinctive Emirati dishes inspired by memories formed in family kitchens where these recipes were first learned and passed down through generations. Still prepared using authentic traditional methods, each dish forms part of a living continuum that connects past and present.
